Ingredients

2 cups of lettuce / green veggies preferably leafy greens / fresh spinach / green cabbage (Optional)

2 tomatoes (diced)

½ cup of cucumber (sliced)

¼ cup feta cheese (crumbled)

1 cup red onions (diced) or green onions (Optional)

1 green bell pepper (chopped)

¼ cup black olives (sliced)

½ green onion sliced thinly into rounds

1 tbsp nutritional yeast (Optional)

1 tbsp Parmesan cheese (Optional)

Herbs : fresh basil /  fresh cilantro / 1 cup chives or any other fresh herbs (Optional)

Nuts : 1 cup walnuts / 1 cup pine nuts (Optional)

Dressing ingredients: 2 tbsp. Of ranch dressing, 1/3 cup Greek yogurt or sour cream, 1 tbsp lemon juice or lime juice, 2 tsp rice vinegar, and 1 tsp sugar. Optional: seasoning to taste. You can use crushed red pepper for spiciness or a dry ranch seasoning mix for more flavoring.

Directions

1. First, chop your lettuce, tomatoes, cucumber, feta cheese, bell pepper, green onion, and sliced olives.

2. Put the dressing ingredients in a bowl and mix. This is the best way to achieve a smooth and creamy texture for your dressing. Make sure not to put on too much dressing, or it will be too soggy. Also, ensure the ingredients are mixed well, which will make for a better flavor. You can add more sugar or salt if needed. Once finished, mix your salad ingredients into the bowl with the dressing. Toss gently until evenly coated in dressing.

3. At this point, you can add more seasoning or sugar if you need to. However, this is a very soggy salad, so the dressing makes up for it. This salad is perfect for making in the oven because it will be extra crispy and delicious. You have to prepare the ingredients first, though.

4. Mix all ingredients to prepare the salad, but do not forget your dressing! The next step is to bake the salad in a pan or on a sheet of tin foil. Putting it in an oven allows all the ingredients to cook evenly, making for an even more delicious meal.
